Meatless Monday – Vegetarian penne pasta

Looking for a delicious meat-free meal to enjoy with your family? Then try this vegetarian penne pasta recipe, loaded with baby tomatoes and crunchy stir fry. It is so convenient and ready in minutes!

Serves 4-6

You’ll need: McCain French Stir Fry; 500g penne pasta; 3 tablespoons olive oil; 1 onion, finely chopped; 2 cloves garlic, finely chopped; 1 cup baby tomatoes; 2 tablespoons balsamic vinegar; 1 teaspoon chilli flakes; ½ bunch chopped basil; salt and pepper to taste.

How to:

Cook the pasta, drain and set aside.

Heat olive oil in a pan over medium heat and add the onions and garlic and allow to cook gently.

Add the baby tomatoes, salt and balsamic vinegar to the pan and allow to cook for about six minutes until they blister and charred.

Remove the onions and tomatoes from the pan. To the same pan add the McCain French Stir Fry and chill flakes – mix and allow to cook over high heat.

Once cooked, remove from the heat and the onions and baby tomatoes back to the pan. Toss the cooked vegetables with the pasta and add in the chopped basil.

Adjust seasoning and serve with crusty bread.
