30-minute meals: Pork chops and butter bean salad

This meal is both fun and easy to make.

It is the perfect mid-week meal for the whole family to enjoy.

 

You will need:

  • One slice of bread, torn into pieces.
  • Four tablespoons olive oil.
  • Two spring onions, sliced.
  • Salt and black pepper.
  • Four boneless pork chops.
  • Four cups spinach, thinly sliced.
  • One can butter beans, rinsed.
  • One tablespoon red wine vinegar.
  • Half a teaspoon dried oregano.

What to do:

Heat oven to 200 degrees Celsius. In a food processor, pulse the bread and two tablespoons of the oil to form coarse crumbs.

Spread the crumbs on a baking sheet and bake until crisp, five to six minutes. Toss with the spring onions, half a teaspoon salt and pepper.

Meanwhile, heat one tablespoon of the oil in a large ovenproof pan over medium-high heat. Season the pork with half a teaspoon each salt and pepper and brown, two to three minutes per side.

Transfer to oven and roast until cooked through, five to seven minutes.

Toss the spinach, beans, vinegar, oregano, remaining tablespoon oil, half a teaspoon salt and pepper.

Top the pork with the bread-crumb mixture. Serve with the salad.
