30-minute meals: Three bean chilli

What could be better than being able to make such a wonderful meal in less than 30 minutes?

This dish will get you out of the kitchen quickly, leaving you with time to just relax.

 

You will need:

  • Two tablespoons olive or vegetable oil.
  • One medium onion, chopped.
  • One large red pepper, seeded and chopped.
  • One large green pepper, seeded and chopped.
  • One large jalapeno pepper, seeded and chopped.
  • Four cloves garlic, crushed and chopped.
  • One cup vegetable stock.
  • One can crushed tomatoes.
  • One can black beans.
  • One can dark red kidney beans.
  • One tablespoon ground cumin.
  • Two tablespoons chilli powder.
  • One tablespoon cayenne hot pepper sauce.
  • One teaspoon coarse salt.
  • One cup spicy vegetarian refried beans.

 

Toppings:

  • Two cups grated cheddar cheese.
  • Chopped spring onions.
  • Diced fresh seeded plum tomato.
  • Corn tortilla chips for dipping.

 

What to do:

Over moderate heat, add oil to a deep pot and combine onion, peppers, and garlic. Sauté for three to five minutes to soften vegetables. Deglaze pan with stock, add tomatoes, black beans, red kidney beans, stirring to combine.

Season chilli with cumin, chilli powder, hot sauce, and salt. Thicken chilli by stirring in refried beans. Simmer over low heat about five to 10 minutes longer, then serve up bowls of chilli and top with grated cheese, spring onions and tomatoes.
