Amanda A-mangia: Easy fish cakes

Try making these delicious, quick and easy fish cakes.

Preparation time 15 minutes

Cooking time 30 minutes

INGREDIENTS

2 large potatoes, peeled and halved

500g hake fillets (or cod or whiting), cubed

1 Tbls butter

1 Tbls onion, grated

1 Tbls fresh parsley, chopped

1 egg

3 Tbls oil for frying

METHOD

Place the potatoes in a saucepan of cold water. Bring the water to a boil. Cook the potatoes until they are almost done.

Add the fish to the saucepan and cook until soft. Drain well. Place potatoes and fish in a mixing bowl.

Add the butter, onion, parsley and egg to the bowl. Mix through and mash. Form the mixture into patties.

Heat the oil in a large pan on a medium-high heat. Fry the patties on both sides until they are golden brown. Drain on paper towels before serving.
