Natalie Rowle’s cow-pea pancake recipe

THIS week, nature lover, environmentalist and Ashley resident, Natalie Rowles shares her cow-pea pancake recipe.
“I am now growing these pest-free, nearly drought-free crops all over the place and suggest others to do the same,” she said.
“The cow-pea ground seeds are turned into flour by using my little coffee grinder. This is my own recipe to make cow-pea pancakes which are absolutely delicious and healthy and don’t give stomach problems.

“Please note, the ground cow-peas give a paste-like effect in the coffee grinder so clean it straight away after removing the cow-pea flour. (makes it so much easier).
“I have thought of experimenting using cow-peas and turning it to cow-pea (peanut-butter) due to the slight oil in the seeds after grinding it up. I will keep you posted.”
COW-PEA PANCAKE RECIPE
1/2 Cup Cow-pea flour
1 tin Coconut milk or 2 Cups Milk
2 eggs
1 1/2 cups Self-raising Cake Flour
1 teaspoon salt
2 teaspoons Baking Powder
Method
Mix dry ingredients first, then mix in the wet ingredients and mix well.
Leave in the fridge for one hour.
Fry in a bit of sunflower oilor olive oil with a spoonful of butter (or without butter).
Use a big soup spoon of the pancake mix and add it to the heated oil/butter in the pan.
Brown both sides – the same way as making normal pancakes.
Enjoy.
