Karyn shares her love language: Sweet potato sponge cake

Turn your leftovers into a really tasty treat with this gorgeous new recipe!

I DECIDED to try out this sweet potato cake as I was baking for my hubby’s birthday. I had mashed sweet potato left from a roast dinner the night before and I whipped together a sponge cake with it. I added in spices and nutmeg – it turned out so nicely and was super easy to make!

Ingredients:

4 eggs

1 cup sugar

2 cups flour

1 cup cooked and mashed sweet potato

1 tsp bicarb

2 tsp baking powder

1 cup oil

1/2 tsp each of nutmeg, allspice and cinnamon

Method:

Beat 4 eggs and 1 cup of sugar until pale.

Add in two cups flour, 1 cup of cooked and mashed sweet potato, 1 tsp bicarb, 2 tsp baking powder, 1 cup oil and 1/2 tsp each of nutmeg, allspice and cinnamon.

Bake in a preheated oven of 180°c for 25 minutes.

Glaze with a mixture of 1 cup icing sugar and 2 tbls hot water or sprinkle with icing sugar.
