Sunday spoil – Roasted plums with cinnamon dumplings

A seasonal plum pudding is the perfect Sunday spoil for the family. If you are not counting calories, add a dollop of vanilla ice cream.

Roasted plums with Cinnamon Dumplings

Serves 4

Ingredients

4 plums, halved & pitted

2 Tbsps sugar

1 tsp vanilla

50ml water

1.5 cups self-raising flour

1 tsp baking powder

1/4 cup sugar

Pinch salt

1 tsp ground cinnamon

50g butter

1 Large egg

60ml amasi/buttermilk

1 tsp vanilla

For cinnamon sugar:

2Tbsps sugar

1tsp ground ginger

Method

  1. Preheat oven to 180c.
  2. Place the plums into a roasting dish, sprinkle with sugar, drizzle with vanilla and water, cover with foil and roast for 30 minutes.
  3. In a bowl, mix together self raising flour, baking powder, sugar, salt and cinnamon.
  4. Add the butter and rub together using your fingers until the mixture resembles breadcrumbs.
  5. Add egg, amasi and vanilla, then stir until combined into a thick batter.
  6. Bring a pot of water to a simmer, then drop spoonfuls of the batter into the water to form the dumplings.
  7. Allow to simmer gently for 20 minutes, gently turning halfway through, until the dumplings are cooked through. Serve the roasted plums topped with the dumplings and a generous sprinkle of cinnamon sugar.
