30-minute meals: Cheese ravioli with spinach and bacon

With moms clawing their way to the public holiday, they aren’t in the mood to spend hours in the kitchen cooking.

This kid friendly meal is not only quick, easy and delicious, but will also satisfy those picky eaters.

You will need:
* 250g bacon, cut into small pieces.
* Half a cup non-alcoholic white wine.
* One packet fresh or frozen cheese ravioli.
* One cup frozen chopped spinach.
* Half a teaspoon salt and a quarter teaspoon pepper.
* Two tablespoons extra virgin olive oil.
* Freshly grated Parmesan cheese.

What to do:
Boil a large pot of water.
While it’s heating, cook the bacon pieces in a large pan until crispy. Cook the pasta according to the directions, minus one minute.
While the pasta cooks, add the wine to the bacon pan and deglaze the bottom. Drain the pasta and reserve one cup of the cooking water.
Add the hot pasta to the pan, and then pour in the frozen chopped spinach. Stir gently, sprinkle with salt, pepper and oil and the Parmesan cheese, then serve.
