Children’s Corner – Let’s make avocado soup with sesame-feta ‘croutons’

Follow this simple recipe to make avocado soup with sesame-feta ‘croutons’

You’ll need:

  • 15ml olive or avocado oil
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 1 green chilli, deseeded and finely chopped (optional)
  • 1.25 litres of vegetable or chicken stock

  • 2 handfuls of baby spinach
  • 3 ripe avocados, peeled and chopped
  • a handful coriander, chopped
  • 1 lemon, squeezed for taste
  • 60ml lightly toasted sesame seeds
  • 8oml of feta, cut into 1cm cubes

Method:

  • Heat the oil on a medium heat and saute the onion, garlic and chilli (if you have decided to use chilli)

  • Once soft add the stock and bring to the boil, and allow to boil for five minutes.
  • Cool slightly.
  • Transfer the liquid to a blender and blend together with the spinach, avocados and coriander until smooth.
  • Season with salt, pepper and lemon juice to taste – serve hot or chilled.

For the sesame-feta ‘croutons’:

Mix sesame seeds through the feta and serve on top of the soup.
