Easy quiche recipe will make for a delicious lunch

Luci Hirsch loves making this quiche. Why not try it?

Are you in the mood for a quiche?

Then why not try Luci Hirsch’s Dot’s quiche recipe.

Luci likes to bake it in a lasagne dish, but it can just as easily be baked in a large quiche pan.

She said she finds this recipe easy to whip up for her family during lockdown for a lazy lunch.

“The recipe is found in Luci’s Mum’s On The Run recipe book and served with a green salad and French bread, and a glass of chilled white wine, it can be turned into a great meal,” said Chantelle du Plessis, public relations officer for Hirsch’s Meadowdale.

The recipe serves four to six people.

Ingredients: 
• 25ml sunflower oil
• 1 large onion, chopped
• 2 carrots, grated
• 500g lean beef mince
• 10ml Worcestershire sauce
• 15ml fresh, chopped, mixed herbs or 5ml dried, mixed herbs
• One 65g tin tomato paste
• 5ml brown sugar
• 200ml water
• Salt and pepper to taste
• 100g green beans, topped and tailed, and halved
• 4 to 6 potatoes, peeled and cubed
• 50g butter or margarine
• 50g cheddar cheese, grated
• 20g dry breadcrumbs

Method:
• Heat oil in a saucepan and sauté onions and carrots for a few minutes. Add mince, and stir with a fork until meat is browned.
• Stir in Worcestershire sauce, and add herbs. Cook for a few minutes.
• Add tomato paste, sugar and water. Simmer for approximately 20 minutes, adding extra water if necessary.
• Only season once the mince has cooked.
• While the mince is simmering, preheat oven to 180ºC/ 160ºC fan/ Gas mark 4.
• Parboil green beans or place in a glass bowl with 60ml water, cover and cook in microwave on 100 per cent for four to five minutes. Drain.
• Boil potatoes in salted water until just tender. Drain and return to the saucepan.
• Add butter or margarine and, over a low heat, toss potatoes in melted butter.
• Add green beans into mince. Spoon into an ovenproof dish and place buttered, cubed potatoes over the top.
• Sprinkle with the cheese and breadcrumbs. Bake for 30 minutes until golden brown and heated through.
