Alternative lunchbox ideas without cold meats

Following the announcement regarding listeriosis found in cold meats, the GCN has put together a few lunchbox ideas to help parents pack cold meat-free lunches.

The listeria breakout has claimed 180 lives across the country and over 20 confirmed cases in Ekurhuleni since January.

A lot of South African families eat cold meats daily, whether you are on the Banting diet and need your daily dosage of bacon or you need the comfort of iKota because of an emotional day, the fact is the majority of the country consumes large amounts of cold meats. With the world’s worst listeria outbreak upon us, many parents have been left wondering what to pack for their children’s lunch boxes.

The GCN has put together creative and easy-to-make lunchbox ideas for the little ones and their parents too.

Monday: A peanut butter and jam sandwich with brown bread. To create a different taste, try using honey instead of jam.

Tuesday: Boiled eggs with mayonnaise on bread or pita. You can substitute the mayonnaise with plain Greek yogurt if you’re watching your fat intake.

Wednesday: Greek salad with a twist. Add all your typical ingredients like lettuce, cucumber, tomatoes, olives, feta, avocado and then add fish fingers or tuna.

Thursday: Plain/Greek yogurt with a bowl of fruit.

Friday: Tuna or salmon with avocado, black pepper, lentils on pita, bagel or bread.

Pair every meal with a snack.

Your snack can either be a fruit, nuts, a yogurt or lightly salted crackers with lettuce, baby tomatoes and cheese.

Remember to wash your fruits and vegetables thoroughly when preparing food and wash your hands well when you’re just about to indulge in your meals.
