Try this sticky chicken recipe to wow your family

Warm up a winter’s evening with this recipe.

“Winter is here and it’s definitely time to warm up and indulge in some comfort food,” said Chantelle du Plessis, public relations officer for Hirsch’s Meadowdale.

“This chicken dish uses chicken thighs and is a great family favourite.

“It’s great as an appetizer or as a main dish served with rice and veggies.

“It’s so easy to prepare with just a handful of ingredients, including Coke and fruit chutney for the glaze.”

The thighs are baked until golden brown with a zesty sticky-crisp outer crust and a moist and juicy interior.

The sticky chicken recipe is from the popular Mum’s On The Run cookbook by Luci Hirsch.

A true family favourite and an ideal meal for busy moms.

Sticky chicken:

Serves four to six people.

Ingredients: 
• 8 chicken pieces, thighs work well
• Salt and pepper to taste
• 250ml Coke Lite/Zero
• 125ml tomato sauce
• 125ml fruit chutney
• 1 packet brown onion soup

Method: 

• Preheat oven to 180ºC/ 160ºC fan/Gas Mark 4.

• Place chicken pieces in an ovenproof dish and lightly season.

• In a large jug or bowl, mix all the other ingredients. Pour over the chicken pieces.

• Bake for approximately 45 minutes, or until chicken is tender.

Combination/solar dome:

• 200°C plus 50 per cent microwave for 20 to 25 minutes.

Microwave: Cook on 100 per cent power for 15 to 18 minutes. Please note that chicken cooked in the oven will be stickier than microwaved chicken.

• Baste the chicken midway through cooking.

• Serve with brown rice, and a salad, or steamed vegetables.

Variations:

• For an adult flavour add 5cm fresh ginger root, chopped; three cloves of garlic, crushed; one small red chilli, finely sliced and 25ml soy sauce.

Sauté ginger, garlic and chilli in 15ml cooking oil. Add in step three.
