Spoil your mum this Mother’s Day with a tasty meal

Make a delicious lunch by following this quick recipe.

With Mother’s Day drawing closer, it’s time for the annual rush that sees dads and children around the country heading into the kitchen to treat the leading women in their lives to a day of sheer relaxation.

Why not make this delicious lunchtime treat for the whole family.

“We used the quick-quick baked chicken recipe from Luci Hirsch’s cookbook Mum’s On The Run,” said Hirsch’s Meadowdale public relations officer Chantelle du Plessis.

Quick-quick baked chicken:

A healthy and great-tasting meal which only takes minutes to prepare.

While it is cooking, put your feet up and relax.

Serves four.

Ingredients:

• 4 boneless and skinless chicken breasts

Topping:

• 60ml low-fat cream cheese

• 125ml mature cheddar cheese, grated

• 60ml sweet chilli sauce or chutney (tomato flavour is good)

• 15ml Dijon or wholegrain mustard

• 15ml coriander or flat-leaf parsley, chopped

Method:

• Preheat oven to 180ºC/160ºC fan/gas mark four.

• Flatten chicken breasts slightly. If they are too thick, cover with a piece of cling film and use a rolling pin to hammer them flatter.

• Combine topping ingredients, divide evenly and spread over the top of each chicken breast.

• Place onto a baking sheet which has been lined with greased aluminium foil.

• Bake for 15 to 20 minutes until golden brown and cooked through.

• Serve with new potatoes and salad or stir-fry vegetables.

Variations:

• Cut a slit horizontally in each chicken breast and use the topping as a stuffing. Drizzle a little olive oil over and cook as above.

• Wrap each chicken breast with a slice of back bacon and secure with a toothpick. The bacon gives a great smoky flavour to the recipe.

Tips:

• Try using a low-fat cheese when cooking. It reduces the fat content, specifically the saturated fats.

• For extra servings increase the topping accordingly for each extra breast used.
