Mushroom Monday: Salmon with mushroom and spinach
Mushrooms are a staple source of protein. Try this mouth-water salmon and mushroom meal tonight
Ingredients
Cooking spray
four salmon fillets
1/2 a teaspoon of salt
1/4 teaspoon of black pepper
1 teaspoon olive oil
1 and a half cups of sliced mushrooms
2 cups of spinach
1 teaspoon grated lemon grind
1 teaspoon lemon juice
Method
Heat pan with cooking spray over medium heat. Sprinkle salt and pepper over the fillets then place into pan and cook for 5 minutes on each side (rotate fillets) Remove from pan and keep warm. Add mushrooms and cook for 2 and half minutes and add spinach and cook for about 30 seconds and remove from the heat, stir in extra salt and pepper, grind and lemon juice.
Serve the mushroom and spinach mixture over fish fillets.
