Greek food is Hirsch’s Lindsay Kleynhans’s favourite, with fresh flavours and shared eating.
It brings back many memories of Saturday afternoons cooking with her gran for family get-togethers and laughter.
These are a few of her family favourites.
Greek chicken:
Ingredients:
500g chicken fillet
Fresh lemon
Selection of herbs
Salt and pepper to taste
Method:
• Cut chicken into bite-sized chunks.
• Marinate chicken in the lemon and herbs.
• Sauté chicken in a small amount of olive oil until cooked through.
Easy tzatziki:Â
Ingredients:Â
1 cup Greek yoghurt
100g grated cucumber
1 tablespoon fresh crushed garlic
Salt and pepper to taste
Method:
• Mix all above ingredients together and refrigerate.

Make a delicious veggie curry for the family
Easy hummus:
Ingredients:Â
1 can of chickpeas drained, save the liquid
1 garlic clove crushed
1 teaspoon salt
3 tablespoons lemon juice
3 tablespoons olive oil
Method:Â
• Add the drained chickpeas, garlic and one teaspoon of salt to a tall cup.
• Pour over the olive oil, lemon juice, five tablespoons of water and two tablespoons of the reserved chickpea liquid.
• Attach the extractor blade of the Nutribullet and blend until smooth and combined.
• Transfer to a serving dish and garnish with more olive oil.
Roasted pepper and feta salad:
Ingredients:
1 whole red pepper
1 whole yellow pepper
1 block of good quality feta
Method:
• Place seasoned and halved red and yellow peppers on a baking tray and brush with olive oil.
• Roast until slightly charred for approximately 20 minutes.
• Allow to cool, slice and sprinkle with feta.
