30-minute meals: Pasta with roasted cauliflower, tomatoes and pepperoni

Quick, easy dinners are the best kind of dinners.

This pasta dish only requires a few ingredients and takes 30 minutes to prepare.

 

You will need:

  • One small head cauliflower.
  • Two tablespoons olive oil.
  • Salt.
  • Pepper.
  • One packet of medium shell pasta.
  • One packet cherry tomatoes.
  • 85g pepperoni.
  • Half a cup chopped fresh flat-leaf parsley.

What to do:

Heat oven to 230 degrees Celsius. On a large rimmed baking sheet, toss the cauliflower, oil, half a teaspoon salt, and a quarter teaspoon pepper. Roast for 12 minutes.

Meanwhile, cook the pasta according to package directions. Drain the pasta and return it to the pot.

Add the tomatoes to the cauliflower, toss to combine, and roast for six minutes more. Scatter the pepperoni over the vegetables and roast until the cauliflower is golden brown and tender, six to eight minutes more. Toss the pasta with the cauliflower mixture and parsley.
