Thirty-minute meals: guacamole grilled cheese sandwich

This cheesy, gooey goodness is both very easy and oh so scrumptious.

This sandwich can be made in less than 30-minutes.

For one sandwich you will need:
* Two slices of bread.
* A third of a cup guacamole.
* Five fresh sprigs of cilantro.
* Two slices of tomato.
* A third of a cup cheddar, grated.
* Half a tablespoon butter.

What to do:
Take your two slices of bread and place them on a wax paper lined baking sheet. Put some cheese on the bread, then add the cilantro and tomato (each on a different slice). Then top with more cheese.
Place the tray in the oven, just long enough for the cheese to melt, about 30 seconds or so. The key here is to melt the cheese but don’t wilt the cilantro.
Remove the tray from the oven and spread the guacamole.
Add the butter to an iron skillet and melt it over a medium-high heat. Then place the assembled sandwich in the skillet and brown on both sides, melting the cheese further.
Cut it in half and serve.
