Something quick and easy for a hearty meal

Last week I shared a recipe for a tasty meat pie with potato crust. This week I have cheese and bacon frizzles.

Ingredients

1 large potato, grated

Half an onion, peeled and very finely chopped

50g Cheddar cheese

4 rashers back bacon, de-rinded and finely chopped

4 tablespoons self-raising flour

1 egg, beaten

Freshly ground black pepper

4 tablespoons vegetable oil

Method

Put all the ingredients in a bowl, except the oil, and beat well. Heat the oil in a large non-stick frying pan. Add the mixture to the pan in spoonfuls and fry for seven minutes on each side until golden brown and crisp. Serve immediately with baked beans or scrambled eggs. Enjoy!
