Baking with Eikenhof Women’s Institute

Members of Eikenhof Women’s Institute enjoyed their June meeting with one of the member’s showing off her expertise at making cheese straws, and how easy it is to bake these delicious savoury snacks.

SUIDEROORD – Jean said you can make your own puffed pastry but she prefers the easier option and buys ready-made puff pastry.

 

Jean Ross, said: “I buy the frozen squares of pastry which are ideal for the cheese straws. Take two of the sheets and butter both on the one side. Grate plenty of Cheddar cheese over one of the buttered squares and sprinkle Italian herbs all over the cheese. Lay the other square of pastry on top, butter side down, and flatten down with a rolling pin. Brush with egg yolk and cut into lengths of about 10cm and 2cm wide. Bake in a hot oven 200c for +- 20 minutes or until golden brown. Serve straight from the oven.” The cheese straws were served at tea time with the rest of the snacks and were quickly devoured.

The monthly competition was home baked scones and with about 10 entries from members. Winners were, Lillian Currie (first), Julie Board (second) and Alva Harrop (third).

The next meeting will be held on Wednesday July 8 at St Andrew’s Church, Burger Street, Suideroord in the hall at 09:30, when a fun auction will be held.
