RECIPE: Oat Biscuits

As the price of food goes up and up, biscuits are becoming a luxury item for many families. These biscuits, oat crisps are easy to make and delicious, and will work out slightly less expensive than the bough ones.
Ingredients
150g butter
50g golden syrup
100g brown sugar
75g quick cook oats
50g desiccated coconut
100g plain flour
1 teaspoon bicarb soda
1 teaspoon hot water
Method
Place butter, syrup and sugar in a large saucepan. Heat gently until the butter has melted and the sugar dissolved. Mix together the oats, coconut and flour, then stir in the melted mixture. Dissolve the bicarb of soda in the hot water and stir into the oat mixture. Allow to cool for a few minutes then form into 18 balls.
Place the balls well apart on greased baking sheets. Leave plenty of space for spreading and bake in a warm oven (160c) for 15 to 20 minutes, or until evenly browned. Leave to cool slightly and set before removing them with a palette knife. Transfer to a wire rack to cool completely. Store in an airtight container.
