WE all know that the holiday season is a time to indulge in everything nice, but with as little effort as possible. After all, it might be the only time of year you get to kick back and relax.
However, the holidays are no excuse to skimp on a good, healthy breakfast. Here follows a few brief breakfast ideas that you should be able to prepare in the wag of a lamb’s tail. Deliciousness is guaranteed!
Sweet potato hash browns egg nests
Prepare your grated sweet potatoes the night prior by baking them in muffin cups for a few minutes. The next morning, fill the cups with seasoned egg mixture and bake for 10 minutes. Serve and enjoy!
Maple and pecan baked oatmeal
After preparing your oatmeal as per usual, pour into a casserole dish and add maple syrup and pecan nuts generously on top. Bake for 10 minutes. Serve with sliced banana or fresh berries (optional).
Baked egg boats
Scramble a few eggs with fresh herbs and seasoning. Cut holes halfway through fresh bread buns to make the “boat” and pour some egg mixture into each bun. Garnish with cheese before baking for 10 minutes. Serve warm.
Bacon and egg puff pastry breakfast tart
Cut out individual squares of puff pastry, fold the edges over to make a “plate” and poke a few holes in with a fork before blind-baking for 10 minutes. Remove from the oven before filling the “plates” with egg and cooked bacon. Bake until the egg is cooked. Serve with cheese and fresh herbs (optional).
Baked ham and cheese roll-ups
Roll out a long rectangle of puff pastry. Arrange strips of cooked bacon all along the rectangle and top generously with cheese. Add seasoning. Roll the rectangle up like a Swiss roll, with the bacon and cheese on the inside. Bake for 20 minutes or until the puff pastry is golden brown. Cut the roll into thick slices and serve warm.
Spinach, pesto, feta and egg casserole
Into a raw egg mixture, add finely chopped spinach, feta cheese and your favourite pesto. Mix it all together and pour into a casserole dish. Bake for 20-30 minutes or when the egg is thoroughly cooked. Serve with toast and your favourite breakfast meat (optional).
Sausage, egg and cheese breakfast sliders with maple syrup
Slice open a few mini bread buns. Top with sliced sausage, fried or scrambled egg and cheese. Drizzle a few drops of maple syrup over the top of the bun and pop in the oven for 5-10 minutes. For extra charm, hold the sandwich together with a cherry tomato skewered on a toothpick or sosatie stick.
Banana and choc-chip French toast
A twist on the classic French toast we all know and love – simply sprinkle with a few chocolate chips and banana slices and serve nice and hot. If the chocolate chips haven’t melted, you should consider popping it in the oven for a few minutes.
