Autumn is on the doorstep. My husband always calls me a farmer because I say I can smell a change in the weather!

 

Apart from shorter daylight hours, when I get up at 05:00 there’s definitely a feel of autumn and as Easter approaches we all know autumn won’t be far behind.

So get out and about, enjoy lunches outdoors and late afternoon drinks on the patio, soon we’ll be staying cosy inside.

Meals on the go

Are you a busy housewife who hasn’t time to prepare a tasty healthy evening meal? I went along to interview Nicola van Loggerenberg who is the owner of Niknak’s Kitchen Diner on the Go.  Nicola was previously in the baking industry, making cakes of all kinds but because most of the work was centred round weekends she decided to diverse and make healthy, hearty dishes, frozen to retain the flavour and freshness.

“I loved baking but wanted to spend more time with my family and because I enjoy cooking, this seemed like the way to go. I cook main meals, such as spaghetti bolognaise, chicken cottage pie, apricot chicken and rice, Beef in beer stew, and many more  as well as vegetable side dishes, including, creamed spinach, boere beans with potato, onion and garlic and sweet potato and butternut bake, to name but a few. I also make a few desserts, apple tart, malva pudding and chocolate brownies,” she said.

All the meals are frozen, and in order to keep the stock moving, Nicola prefers if orders can be taken.

I sampled the sweet and sour pork dish with rice as well as the beef curry and rice. Both were very good and tasty. “I don’t make the curry dishes strong because everything must be suitable for family meals but I do make a pickle chilli relish to go with it for those who enjoy a bite!”

All main meals come in sizes 350g and 500g but larger quantities can be ordered. The meals are cooked and frozen into microwave safe aluminium foil packaging, and heating instructions will be given with your order.
