Jam and cream doughnuts without the added oil

This jam and cream doughnut recipe is easier than you think and, best of all, is great to make in an air fryer.

We’re often asked how to make air-fried donuts – how to get the crispy, golden edge through to the soft dough that melts in your mouth.  Well, try out this recipe in your Vortex or Duo Crisp and let us know how you get on!

Ingredients

  • ½ tsp salt
  • ¼ cup sugar
  • 4T butter, melted and cooled
  • 1 large egg
  • 3 cups flour
  • 1 cup milk, warm
  • 2 ½ tsp yeast
  • 1 tsp vanilla  essence
  • Jam to serve
  • Whipped cream to serve

Method

  1. To make the dough, add a teaspoon of sugar, yeast, milk and vanilla essence, mix and allow to rest until bubbly. Add the remaining sugar, salt and egg to the yeast. Add the butter and two cups of flour, mix until smooth, add the last cup of flour and knead until smooth. Cover with cling wrap for 30 minutes.
  2. Punch down the dough and roll out to about 3cm thick then cut into 7cm rounds. Allow rising for another 15 minutes on a greased tray.
  3. While waiting to rise, grease tray with vegetable oil and set to Air Fry for 7 minutes at 180C to pre-heat. Then add the donuts carefully and turn halfway.
  4. Check they’re done (if not allow another 2 / 3 minutes on Air Fry.
  5. Once done remove them and let them cool slightly.
  6. While warm, lather in melted butter then coat in sugar and fill with jam and cream.
