Shake up your supper routine with this fabulous sticky chicken

It's great as an appetizer or as a main dish served with rice and veggies.

Winter is here and it’s definitely time to warm up and indulge in some comfort food.

It’s so easy to prepare with just a handful of ingredients – including Coke and fruit chutney for the glaze.

The thighs are  baked until golden brown with a zesty sticky-crisp outer crust and a moist and juicy interior.

The  sticky chicken recipe is from the popular Mum’s on The Run cookbook by Luci Hirsch.

Serves 4 – 6

  • 8 chicken pieces; thighs are good
  • Salt and pepper to taste
  • 250 ml Coke Lite/Zero
  • 125 ml tomato sauce
  • 125 ml fruit chutney
  • 1 packet brown onion soup
  1. Preheat oven to 180˚C/ 160ºC fan/Gas Mark 4.
  2. Place chicken pieces in an ovenproof dish and lightly season.
  3. In a large jug or bowl, mix all the other ingredients. Pour over the chicken pieces.
  4. Bake: for approximately 45 minutes, or until chicken is tender

Variations:

  • Add 5 cm fresh ginger root, chopped; 3 cloves garlic, crushed; 1 small red chilli, finely sliced and 25 ml soy sauce. Saute ginger, garlic and chilli in 15 ml cooking oil. Add in step 3.
