What’s for dinner?  Middlecut fried rice with cabbage

Throw together a tasty meal in less than 30 minutes. It is loaded with veggies and canned middlecut mackerel, making it a healthy and flavourful choice for a speedy family supper.

Serves 4

You’ll need: 1 can 400 g Lucky Star Middlecut; 30ml cooking oil; 1 small onion, chopped or sliced; 2 medium red chillies, chopped or sliced; 5ml paprika; 1 medium carrot, peeled and grated; ¼ medium white cabbage, shredded; ¼ medium red cabbage, shredded; 2 cups cooked Basmati rice; ½ cup fresh or frozen peas; salt and pepper to taste

How to: 

In a medium saucepan, heat oil and add the onion, chillies, and paprika and fry for 5 minutes.

Add the carrots, white cabbage and red cabbage and fry for further 3 minutes.

Cook rice according to packet instructions and add the fish, and peas and cook for 3 – 5 minutes, stirring gently.

Garnish with parsley or micro herbs and serve warm.
