What’s for dinner? Pea and bacon pasta salad

In the mood for something quick easy and delicious for dinner tonight? Try this yummy pasta salad that will be ready in 20 minutes. Easy peasy!

Serves 4

You’ll need: 300g McCain Peas; 500g bacon cut into pieces; 2 tablespoons butter; 1 onion, finely diced; a small bunch of thyme; ½ cup cream; ½ cup Parmesan, grated; salt and pepper; chopped parsley; 1 packet Penne pasta cooked and drained – keep ½ cup of the cooked pasta water.

How to: 

Cook pasta and set aside. 

Fry the bacon and set it aside.

To the same pan, melt the butter and add the onions, thyme and peas and cook for 5 minutes

Add the cream and parmesan.

Add the cooked bacon back to the pot and toss with the pasta – add some of the reserved water from the cooked pasta.

Add more parmesan and serve.
