This recipe is sure to satisfy even the pickiest of eaters.
You will need:
- Four boneless, skinless chicken breasts.
- Half a teaspoon salt.
- A quarter teaspoon black pepper.
- Three quarters of a cup shredded mozzarella cheese.
- One plum tomato, eight slices.
- Eight large basil leaves.
- A third of a cup bread crumbs.
- Two tablespoons grated Parmesan cheese.
- Two egg whites, lightly beaten.
- Two teaspoons olive oil.
- One tablespoon chopped garlic.
- One diced tomatoes .
- A quarter cup torn basil.
- One packet of angel hair pasta, cooked.

What to do:
Pre-heat the oven to 180 degrees Celsius and coat a baking pan with non-stick cooking spray.
Slice each chicken breast in half horizontally, leaving one side attached. Open like a book and season with salt and pepper. On one side of each breast, layer mozzarella, tomato and basil and fold over.
Combine bread crumbs and Parmesan on a plate. Dip both sides of chicken in egg whites and coat with bread crumb mixture; place on prepared baking pan. Lightly spritz with non-stick cooking spray and bake for four to five minutes per side or until cooked through.
Meanwhile, in a saucepan heat oil over medium-high heat; add garlic and cook 30 seconds. Stir in tomatoes and remaining salt and pepper. Simmer for three minutes then add basil.
Serve chicken with cooked angel hair pasta and sauce.
