Thirty-minute meals: speedy tuna, lemon and bean pasta

Using lemon zest adds a fragrant aroma as well as a zingy taste to this speedy tuna pasta.

You will need:
* 375g spaghetti.
* 250g green beans, trimmed, cut into pieces.
* Two tablespoons extra virgin olive oil.
* Three garlic cloves, crushed.
* Two spring onions, thinly sliced.
* Two teaspoons finely grated lemon rind.
* 425g tuna in oil, drained, shredded.
* One cup fresh flat-leaf parsley leaves, chopped.
* A quarter cup lemon juice.
* Grated parmesan, to serve.

What to do:
Cook pasta in a pot of boiling, salted water following packet directions until tender, adding beans for the last three minutes. Drain, reserving a quarter cup of the cooking liquid.
Meanwhile, heat oil in a large, deep frying pan over medium-high heat. Add garlic, onion and lemon rind. Cook for one minute or until fragrant. Add tuna. Cook for one minute or until heated through. Add pasta, beans, parsley, lemon juice and reserved cooking liquid. Cook, tossing for two to three minutes or until heated through. Season with salt and pepper. Serve topped with parmesan.
