What’s for dinner? Russian lasagne

This family-pleasing lasagne is proof that there are many ways you can enjoy Russians …

Serves 4

You’ll need: 500g Eskort Smoked Russians sliced; 1 onion, chopped; 1 red pepper, chopped; 1 garlic clove, chopped; 1 tin peeled tomatoes; 1 tin tomato puree; 1 tablespoon paprika; 1 tablespoon dried chilli; salt and pepper; lasagne sheets; ½ cup butter or margarine; ¼ cup flour; 3 cups milk; 2 cups grated cheese (Cheddar/Mozzarella); 3 tablespoons oil for cooking.

How to:

Heat a pot over moderate heat. 

Add the oil, onion, garlic and pepper to the pan and fry for 5 min. 

Add the sliced Russians, peeled tomatoes, tinned tomatoes, paprika and dried chillies. Allow simmering for 10 min. 

In a large saucepan, melt butter over medium-low heat. Add flour and mix constantly for 1 minute.

Add the milk in, mixing as you go to incorporate into the flour mixture. Season with salt and pepper to taste. 

Layer the lasagne by adding in the Russians in sauce first, followed by the white sauce and lasagne sheets.

Repeat the process and finish off with white sauce and grated cheese.

Bake the lasagne in a preheated oven of 200°C for 10 min. 

To serve:

Serve with fresh bread rolls or crusty bread.
