It’s Heritage weekend, fire up the potjie

Don't that braai fire out just yet, we have a delicious potjie recipe to being your Heritage weekend to a yummy close!

What are you doing this Heritage Day weekend (yes, weekend… one day just isn’t enough for us)? If you’re getting together with the family and would like to wow them with a traditional potjie, we’ve got a great recipe for you.

Ingredients

4 tablespoons oil

3 onions, chopped

1 fresh chilli, finely chopped

3 cloves garlic, crushed

500g packet fresh mushrooms

1kg stewing beef (bone on), cut in chunks

500g Pouyoukas 5 bean mix (pre- soaked overnight)

4 carrots, roughly chopped and other seasonal vegetables of your choice

12 baby potatoes

2 tins creamed sweet corn

500ml beef stock

50ml mixed herbs

Salt and pepper to taste

½ cup red wine (optional)

Method

 Braise onions and mushrooms in oil. Add chilli and garlic and sauté for two minutes. Add beef, return the lid and let it steam for five minutes. Add carrots and potatoes and other vegetables. Cover and let steam for five minutes.

Add beans, sweetcorn, beef stock and mixed herbs. Cover pot and leave to cook for 20 minutes. Keep covered and simmer for 1.5 hours, monitoring to ensure that mixture does not dry out.  Add the fresh mushrooms about 20 minutes before serving.
