Durban chef shares recipe for Christmas butter cookies

Karyn Smith said the butter biscuits also make lovely Christmas gifts.

THERE is nothing quite like the smell of freshly baked butter cookies for CURRO Hillcrest’s functions coordinator and chef extraordinaire, Karyn Smith.

This week, she shares her recipe for Christmas butter biscuits.

She said the butter cookies fill the house with such a beautiful smell and always remind her of family and holidays.

“I gift these biscuits every year to all my colleagues and Hubbies, and they’re always a hit. Homemade is always better!” she said.

Christmas butter biscuits:
Ingredients:
1 block butter
1 1/2 cups castor sugar
1 tsp vanilla essence
3/4 cup flour (depending on how soft your butter is)

Method:
Beat butter, sugar and vanilla until light and fluffy. (Allow it to turn white.)
Add flour one cup at a time.
Be careful not to add too much flour as you don’t want a crumbly mixture. (You want a soft mixture.)
Roll into balls and press with a cookie press or fork.
Bake in a preheated oven at 180°C for 12–15 mins.
