Christmas recipes – my pickled egg experiment

Berea Mail journalist Danica Hansen tries to make pickled eggs – a family favourite for Christmas.

IN my family, Christmas is all about the food. We aren’t big on gifts, but the meal we share is one the whole family looks forward to – anticipating the familiar favourites served up every year.

Growing up, I quickly learned that one of our family favourites – pickled eggs – is not the norm on most South African tables. Not only do we serve these up as a side for Christmas lunch, but pickled eggs are so popular in our house that we have even been known to give jars of them as gifts.

Usually, I leave it to other family members (mostly my dear mom) to make these delicacies and just show up on Christmas to eat my full. This year was going to be no different until it dawned on me that I could, in fact, make a jar of pickled eggs for my own home – there’s just one problem.

My mom usually makes her batch of pickled eggs in October, leaving them to pickle for two months before they are served! Well, I love a challenge, so I have tweaked the recipe and tried my luck – let’s see if my pickled egg experiment – my ‘eggsperiment’ – will succeed. I might just be having Christmas in July instead!
