Diabetes month: Try this sugar free ice-cream recipe at home

The whole family can enjoy the health benefits of this sugar-free recipe, although, those with diabetes should check with their doctor first.

AS Diabetes Awareness Month is commemorated in November, what better way to join in than learning a sugar-free recipe that the whole family can enjoy? 

With summer months bringing warm weather, a bowl of ice cream is the perfect treat to  cool off after a long day. While store-bought ice cream is high in sugar and carbohydrates, making ice cream at home is easier than it seems. We have got the ‘scoop’ on a great sugar-free vanilla ice-cream recipe to enjoy.

While this is a sugar-free option, each person living with diabetes has a different carbohydrate requirement, so be sure to check with your doctor before trying these out at home.

We used an ice cube tray to freeze the coconut milk.

Ingredients

2 cans full-fat (unsweetened) coconut milk
1 fresh vanilla bean
1 tbsp Xylitol

Add vanilla and Xylitol before blending.

Method
Shake your cans of milk thoroughly before opening. Place a sheet of parchment paper on a rimmed baking sheet. Pour the coconut milk onto the parchment paper and freeze for several hours, until hard. Pop the frozen coconut milk pieces into the food processor and blend, scraping down the sides as you go. When the coconut mixture begins to smoothen and resemble ice-cream, slice open the vanilla bean and scrape the seeds inside the food processor along with your Xylitol. Continue to process until smooth and at your desired texture. Serve immediately.
