Thirty-minute meals: meatballs in creamy dill sauce

This healthy dish takes just a few ingredients and a few minutes to make.

This recipe is full of flavour, but that’s not the only wonderful part. It is also quick and easy to prepare.

What you need:
* 500 grams lean mince.
* One egg.
* A third of a cup bread crumbs.
* A quarter cup fat-free milk.
* Half a teaspoon salt.
* Half a teaspoon black pepper.
* One medium onion, thinly sliced.
* Two cups beef stock.
* Two tablespoons all-purpose flour.
* One can sliced mushrooms, drained.
* A quarter cup sour cream.
* Two tablespoons snipped fresh dill.
* Egg noodles, cooked following package directions.

What to do:
In a large bowl, combine mince, egg, bread crumbs, milk and a quarter teaspoon each of the salt and pepper. Form into 16 meatballs.
Heat a large non-stick pan over medium-high heat; coat with non-stick cooking spray. Add onion and cook two minutes. Combine stock and flour; add to the pan. Bring to a simmer. Add mushrooms, meatballs and remaining salt and pepper. Cook for 12 minutes, turning meatballs once. Stir in sour cream and dill off heat.
Serve with noodles and, if desired, steamed broccoli.
