Thirty-minute meals: cheesy pizza quesadillas

This recipe is cheesy, versatile, easy, quick to make and perfect for a meat-free Monday evening.

This scrumptious pizza-quesadilla hybrid is a new favourite easy weeknight meal.

You will need:
* Two large flour tortillas.
* Three quarters of a cup grated mozzarella cheese.
* Half a cup grated cheddar cheese.
* A quarter cup grated Parmesan cheese.
* A quarter cup pizza sauce plus additional sauce for dipping.

What to do:
Lay a tortilla flat, and on the bottom half only, spread 2 tablespoons pizza sauce. Sprinkle half the mozzarella, cheddar and Parmesan cheeses. Repeat with second tortilla.
Carefully fold the top half over to create a half-moon shape.
Place in a pre-heated panini press and cook until cheese is melted and outside is golden-crisp. Alternately, cook in a pan drizzled with vegetable oil over medium-high heat, carefully flipping occasionally, until the cheese is melted and both sides are golden-brown.
Cut into wedges and serve with additional pizza sauce for dipping.
