This recipe is sure to satisfy even the pickiest of eaters.
You will need:
* Four boneless, skinless chicken breasts.
* Half a teaspoon of salt.
* A quarter teaspoon of black pepper.
* Three quarters of a cup of shredded mozzarella cheese.
* One plum tomato, eight slices.
* Eight large basil leaves.
* A third of a cup of bread crumbs.
* Two tablespoons of grated Parmesan cheese.
* Two egg whites, lightly beaten.
* Two teaspoons of olive oil.
* One tablespoon of chopped garlic.
* One diced tomatoes .
* A quarter cup of torn basil.
* One packet of angel hair pasta, cooked.
What to do:
Pre-heat the oven and coat a baking pan with non-stick cooking spray.
Slice each chicken breast in half horizontally, leaving one side attached. Open like a book and season with salt and pepper. On one side of each breast, layer mozzarella, tomato and basil and fold over.
Combine bread crumbs and Parmesan on a plate. Dip both sides of chicken in egg whites and coat with bread crumb mixture; place on prepared baking pan. Lightly spritz with non-stick cooking spray and bake for four to five minutes per side or until cooked through.
Meanwhile, in a saucepan, heat oil over medium-high heat; add garlic and cook 30 seconds. Stir in tomatoes and remaining salt and pepper. Simmer for three minutes then add basil.
Serve chicken with cooked angel hair and sauce.
