You’ll need:

• 8 fresh grey Oyster mushrooms, roughly chopped
• 1 teaspoon of fresh crushed garlic
• 2 tablespoons of butter
• 1 sprig of fresh thyme

Method

• Place half the butter in a frying pan and melt on a medium to high heat.
• Add in the garlic and fry gently for about five minutes.
• Add in the mushrooms and cook until they begin to reduce in size.
• Drop in the remainder of the butter and the Thyme sprig and cook for five to eight minutes moving the mushrooms around in the butter.
• Add to pasta dish and serve.
