Veg to the max – quick meatless mince recipes for lazy weekend meals

When you feel like vegging out but a snack attack hits, these recipes using Future Farm’s plant-based Mince are quick to prepare and they win on flavour too.

Savoury, comforting and full of flavour, mince in tomato sauce is the basis of so many classic dishes around the world. Here it’s reduced to its simplest and quickest incarnation with soft bread rolls holding it as a tasty snack – a close cousin to America’s sloppy joe and South Africa’s bunny chow. Plant-based Future Mince browns beautifully and quickly so that these bites of deliciousness can be ready in 10 minutes.

Meatless mince sandwich melt

You’ll need: 2 x 270g packs Future Mince; 2 tablespoons oil; 250ml ready-prepared tomato pasta sauce; 250g grated vegan mozzarella cheese; finely chopped herbs – parsley or chives to garnish; soft or crusty rolls to serve

How to:

In a non-stick frying pan heat your usual cooking oil and brown the Mince according to the packet instructions, gently separating the strands as it browns. Season with salt and pepper and any herbs or spices that you like.

Heat the tomato sauce. Stir the browned mince into the sauce.

Halve and hollow out your rolls. Fill the hollow with a generous scoop of the mince sauce.

Sprinkle grated cheese on top. Place under the grill to melt.

Garnish with chopped herbs and eat immediately and messily with your hands!

You can easily halve or double the quantities depending on how many mouths you’re filling. These quantities would serve 4 hungry people or 8 as a slightly peckish snack.

Quick-fix bunny chow

Use the recipe above with the following additions for an instant version of this much-loved South African staple. It might not be as authentic without that slow aromatic curry cooking time, but it’s just as comforting and tasty.

Spice the mince once it starts to brown with your favourite curry spice mix, some fennel, cinnamon and a pinch of cardamom. Keep stirring gently as it cooks, as the spices will tend to make it stick more to the pan.

Add a drained tin of chickpeas or beans to the tomato sauce and heat through.

Mix spiced, browned mince and tomato sauce together. Don’t halve the rolls for this one, just hollow out the centre to hold more of the spicy Mince curry filling.

Sprinkle with fresh coriander instead of parsley, and you can leave off the cheese. This is just the start of the flavours you can add to Future Farm’s plant-based Mince. Let your imagination go wild and come up with more creative ways to spice it up for lazy weekend lunches with friends.
