What’s for dinner? Frikkadels in a spicy pumpkin sauce
Why don’t you do something different for dinner tonight? Serve delicious tender pork meatballs blanketed in a warm and creamy roasted pumpkin sauce on a platter with your choice of pickles, preserves, bread and cheeses.
You’ll need: 2 cups pumpkin, diced; 3 Tbsp olive oil; a pinch of cayenne pepper; 1 clove garlic, chopped; ½ cup tomato purée; 1 cup fresh cream; 1 cup vegetable stock; salt and freshly ground black pepper — to taste; 350g Eskort Mini Frikkadels.
How to:
Preheat oven to 190°C.
In a large bowl, mix pumpkin, olive oil, cayenne pepper and garlic.
Transfer to a lined baking tray and bake for 15 minutes.
Place roasted pumpkin in a food processor and blend until smooth.
Heat blended pumpkin in a frying pan over moderate heat.
Add tomato puree, cream and vegetable stock, and season with salt and pepper.
Add frikkadels and cook for 7 minutes.
Serve on a platter with your choice of pickles, preserves, breads and cheeses.
