KNOWN to bloom in summer and be low in calories, the sweet potato is a South African favourite for ‘those in the know’. The versatile vegetable can be baked, boiled, roasted, grilled and deep fried.

Sweet potatoes are packed with nutrients that are good for the body.

Quinton Mostert, Food Lover’s Market’s Mall @ Newmarket store manager, has given us tips on the best ways to select and store sweet potatoes; to prevent them from ripening too soon.

When purchasing sweet potatoes, select the small to medium ones as they are normally sweet and creamy – they should be firm, smooth and even toned.

They should be kept at room temperature, as sweet potatoes must only be refrigerated once they’ve already been cooked. Placing sweet potatoes in the refrigerator before cooking will harden the core of the vegetable and create spots, leading the vegetable to spoil much faster.

When stored properly, sweet potatoes could be edible for up to two weeks .
