BEETROOT is packed with minerals and vitamins and is fairly versatile in how it can be enjoyed. When roasted whole the beetroot becomes sweet and increases the depth of its flavour. It can also be blended into a classic soup and served as an appetiser at a dinner party, pickled and enjoyed as a salad or as a refreshing juice during a workout. Quinton Mostert, store manager at Food Lover’s Market at Mall @ Newmarket gave us some helpful tips on how to select and store beetroot.
The greens of fresh beetroot should be unbroken with no signs of spoilage.
When purchasing beetroot make sure that it is firm, smooth, vibrant red-purple. Avoid soft or wrinkled beetroot.
Beetroot with the greens attached can be kept for three to four days in the fridge.
Cooked beetroot can be stored in the fridge as it holds its flavours and texture.
