Quinton Mostert, the store manager of Food Lover’s Market at Mall @ Newmarket, shares some tips on how to handle raw chicken before turning it into the star of your meal:
When handling raw chicken, as with any other meat, it is important to ensure that your hands and the surface you’re working on, as well as the utensils you’re using, are clean. Raw chicken can breed harmful salmonella bacteria, which could lead to food poisoning. With careful handling, this is easily prevented. If you’re not using raw chicken immediately, cover it well and store it on the bottom shelf of the fridge to decrease the risk of cross-contamination. Do not store raw chicken in the refrigerator for longer than 24 hours – put it in the freezer instead. When cooking chicken, always ensure that the chicken is cooked completely before eating. Never cook chicken partially and then store it to be finished later, since this also promotes bacterial growth.
