Thirty-minute meals: Gnocchi and tomato bake

After a sweltering weekend and a long day at work, no one feels like spending hours in the kitchen preparing dinner.

This comforting meat-free Monday meal is packed with rich Italian flavours and ready in only 30 minutes.

You will need:
* One tablespoon olive oil.
* One onion, chopped.
* One red pepper, deseeded and finely chopped.
* One garlic clove, crushed.
* One can chopped tomatoes.
* 500 grams gnocchi.
* A handful basil leaves, torn.
* 65 grams torn mozzarella cheese.

What to do:
Pre- heat your oven to grill.
Heat the oil in a large frying pan and then soften the onion and pepper for five minutes. Stir in the garlic, fry for one minute, pour in the tomatoes and gnocchi before bringing to a simmer.
Allow to bubble for 10 to 15 minutes, stirring occasionally, until the gnocchi is soft and the sauce has thickened. Season, stir through the basil, then pour into a large ovenproof dish.
Scatter with the mozzarella and then grill for five to six minutes until the cheese is bubbling and golden.
