It’s true, January is nearly through but we still have a few more summer months to enjoy before autumn arrives.

Looking around the shops though I’ve noticed winter clothing making an entry and this is quite depressing! The good news though, summer clothing sales won’t be far off and bargains galore will await you.

Valentine’s Day is around the corner. For those of you who want to go out for lunch or dinner (this year it falls on a Saturday) make sure to book a table at your favourite restaurant/ coffee shop, as soon as possible.

Are you a banting believer – or not?

All the rage for many people over the past few months, banting diets have become increasingly popular. In fact some restaurants I’ve visited have ‘banting menus’ available. I’ll be honest with you, I haven’t tried it yet but I know a good few friends who have and for them, the banting diet has worked!

For the next few weeks I’ll be giving you a different banting recipe. If you need to lose weight maybe give it a try, although make sure you are medically fit beforehand.

Two-cheese Omelette

Ingredients

30g unsalted butter
2 tablespoons finely chopped onion
4 eggs
2 tablespoons double thick cream
120g soft cheese, mashed or chopped
60g firm cheese, grated
1 tablespoon chopped parsley, to garnish

Instructions 

1. Heat the butter in a non-stick frying pan over a medium heat

2. Add the onion and cook until transparent

3. Beat the eggs together with the cream and soft cheese

4. Pour into pan and tilt pan to spread eggs to edges of pan

5. Cook over low heat until eggs begin to set.

6. Loosen eggs from sides of pan with an egg lifter

7. Tilt pan again to allow uncooked eggs to run to the sides

8. Sprinkle the grated hard cheese over the eggs and cook for 1 minute

9. Slice the omelette in two and fold each semicircle in half

10. Flip over to melt the cheese and brown both sides

11. Serve hot and crisp

12. Garnish with parsley, if desired.

This is my daughter’s own recipe and one which she says is delicious. I’m definitely going to try it!

1. Break cauliflower into florets after rinsing

2. Boil cauliflower until soft (approx 20 minutes)

3. Drain water and place cauliflower in a bowl (I then microwave cauliflower without water for about three minutes. I find it releases more water from the cauliflower)

4. Using a potato masher mash cauliflower (if it doesn’t mash well, it is under cooked)

5. Add about a cup of grated cheddar or mozzarella cheese and a dollop of butter, along with salt and pepper and give it a stir until all is combined.

Serve with pretty much anything!

Fed-up (she wishes to remain anonymous) says:  “I am sure a lot of us have made the mistake before of ticking those little blocks to select your preferred method of correspondence which is usually SMS, postal, e-mail or none. I made the mistake of choosing SMS at one of the local optometrists, little did I know a few years down the line, this would become a nightmare. The company will add you to the notification system in a matter of seconds, but oh boy, what a nightmare to get you removed. I have been to see them personally, I have phoned numerous times, spoken to two different receptionists and I have spoken to the store manager. All a waste of time!  The messages still come through. I haven’t been to this particular store in years, but they still tell me it is time for my annual eye test. I do not feel it is worth it wasting the police’s time with this, but is there perhaps a reader out there who has the same problem? How did you fix it?”
