Meals for one or two for Christmas

If you find yourself alone or just a couple for any meals over the Christmas period, cooking up a storm is not something you’ll most likely want to do, especially if you are just wanting a quick meal.

Make sure you have chicken portions, bacon, cheese, fresh or frozen vegetables, frozen fish, tinned soup, potatoes and rice and salad ingredients in the fridge.

Meal ideas

Baked chicken

Cook portions (one or two) in tinfoil in the oven, dot with butter before cooking. In a separate piece of tinfoil put slices of potato, dot with butter and season with salt and pepper. Bake both for +/- one hour.

Serve with a salad or frozen vegetables with melted cheese on top.

Bacon omelette (for two)

Fry four rashers of bacon until cooked. Whisk four eggs together with a little water, season with salt and pepper, cook and when nearly set, add cooked bacon to one side and fold over. Serve with a side salad.

Fish bake

Place fillets of frozen fish in an oven-proof dish, pour over a can of mushroom or tomato soup and bake in the oven for 30 minutes. Make rice and serve with frozen peas.

Baked potatoes

Cook potatoes in a microwave. Split and grate cheese over the top, putting them back into the microwave for a minute until the cheese is melted.
