FEW things are as hearty as a good old potato served in a stew, as skinny fries or as a crisp roast potato. Quinton Mostert, store manager at Food Lover’s Market at Mall @ Newmarket, has shared some useful tips on the best ways to store potatoes so that they keep for up to two months.
· Make sure that you store potatoes in a dark, cool, dry, well-ventilated area.
· Keep your potatoes separate from onions, as they release ethylene gas which can make your potatoes sprout sooner.
· Don’t refrigerate potatoes because the starch will convert to sugar and the potato will be glassy with a sweet taste.
