Recipe of the day: Lemon sago pudding

Looking for a different pudding to make tonight? Try this!

This can be made to completion over the stove or boiled and then baked.

Ingredients
• 100g Sago.
• 600ml Milk (full cream works best).
• 30g Brown sugar.
• Grated rind of one lemon.
• Grated nutmeg for baking.
• 1tsp Vanilla essence.

Instructions

On the stove
• Bring the milk to just below boiling point and sprinkle the sago over and stir it in.
• Bring the milk to the boil, stirring all the time.
• Reduce heat, stir in sugar, vanilla essence and lemon rind and simmer for 15 minutes until sago is • clear, stirring occasionally to prevent sago sticking.
• Turn into a bowl and serve immediately.

In the over
• Following instructions above but only boil for five minutes.
• Grease an over proof dish and pour sago mixture into it.
• Sprinkle nutmeg (or cinnamon if preferred) over the top.
• Cook at 160°c for 20 to 30 minutes until the sago is clear.
