Thirty-minute meals: lamb with two-pepper bulgur

Bulgur, made from steamed, dried and crushed wheat kernels, brings a nutty flavour to lamb chops.

This seven-ingredient, simple dish is ready in about 30 minutes.

You will need:
* Two cups water.
* One cup bulgur wheat.
* Half a cup chopped onion.
* Four lamb loin chops.
* One and a half teaspoons of lemon-pepper seasoning.
* One cup of small spinach leaves or shredded spinach.
* One jar of roasted red sweet peppers, drained and coarsely chopped.

What to do:
In a medium saucepan combine water, bulgur, and onion. Bring to a boil, reduce heat and simmer, cover for 12 to 15 minutes or until most of the liquid is absorbed.
Drain, cover and keep warm.
Meanwhile, trim the fat from the meat. Sprinkle half a teaspoon of the lemon-pepper seasoning over the meat. Place the meat on the unheated rack of a broiler pan. Broil until the lamb meets the desired tenderness, turning once halfway through broiling.
To serve, stir the remaining teaspoon of lemon-pepper seasoning, the spinach and roasted peppers into bulgur mixture. Divide bulgur mixture among the dinner plates and top with lamb chops.
