An egg-cellent treat

The idea of a spiced and spiked egg yolk and milk mixture will probably not go down well with many people.

However, once you’ve tasted a traditional eggnog drink you can decide whether you love it or hate it.

According to the Oxford English Dictionary, ‘nog’ is ‘a kind of strong beer brewed in East Anglia’.

Alternatively, nog may stem from ‘noggin’, a Middle English term for a small, carved wooden mug

used to serve alcohol.

Here’s a decadent eggnog recipe to tempt even the biggest sceptic:

Ingredients

4 cups milk

5 whole cloves

½ teaspoon vanilla extract

1 teaspoon ground cinnamon

12 egg yolks

1 ½ cups sugar

2 ½ cups light alcohol

4 cups light cream

2 teaspoons vanilla extract

½ teaspoon ground nutmeg

Nutmeg, grated, to float on top of each serving

Method

Combine milk, cloves, ½ teaspoon vanilla and cinnamon in a saucepan and heat over lowest setting for five minutes.

Slowly bring milk mixture to the boil.

In a large bowl, combine egg yolks and sugar.

Whisk together until fluffy.

Stir in rum or sherry, cream and two teaspoons of vanilla and nutmeg.
