Classic steak marinade

Add more flavour by marinating it first.

Millions of South Africans will having a braai this Heritage Day, but instead of just slapping the meat on the braai this year, why not add more flavour by marinating it first.

Whether you are having chicken, beef or pork, we have a marinade recipe to suit your taste buds.

A great steak doesn’t need any help. A not so great steak does. If you are grilling a steak that isn’t tender, then this classic steak marinade is perfect.

For this marinade you will need:

  •  60 ml oil
  •  60 ml red wine vinegar
  •  Three tablespoons Worcestershire sauce
  •  One tablespoon salt
  •  One teaspoon black pepper
  •  One teaspoon dried oregano
  •  One teaspoon dried thyme

Combine all ingredients and mix well; soak your steak in marinade for about two to four hours.

Note: You need an oil with a high Smoke Point so choose a refined oil, extra light olive oil, or avocado oil.

Lemon and rosemary:

This is a great marinade recipe for chicken. It gives you that lemon-herb flavour that you find on so many store made chickens, but this is better.

For this marinade you will need:

  •  Three large lemons.
  •  A quarter cup fresh rosemary, or two tablespoons dried.
  •  A quarter cup of olive or salad oil.
  •  Four cloves garlic, minced.
  •  One teaspoon salt.
  •  A quarter teaspoon white pepper.

Cut lemons in half and squeeze out the juice into a nonreactive bowl or re-sealable plastic bag.

Add in remaining ingredients, mix well. Marinade the chicken for about two hours.

Pineapple:

This sweet, fruity marinade has the power of pineapple and cider vinegar to work its way into meat. Add to this a collection of flavors that turn any cut of pork or chicken into something truly great.

For this marinade you will need:

  •  One cup crushed pineapple.
  •  A third of a cup soy sauce.
  •  A third of a cup honey.
  •  A quarter cup cider vinegar.
  •  Two cloves garlic, minced.

Mix all ingredients together and place your pork in the marinade.
